中文摘要:鱼油中的ω-3多不饱和脂肪酸主要包括二十二碳六烯酸(docosahexaenoic acid, DHA)和二十碳五烯酸(eicosapentaenoic acid, EPA),它们是人体中不可或缺的脂肪酸。本文主要介绍了DHA和EPA的生理功能以及鱼油微纳米化制剂的制备方法,包括鱼油微囊化和纳米乳化两大类。前者主要采用喷雾干燥法、锐孔-凝固浴法、分子包裹法和水相分离法等技术制备;后者主要分为高能乳化法和低能乳化法两种制备机制。在高能乳化方法中,主要包括剪切搅拌乳化法、超声波乳化法和高压均质乳化法等;在低能乳化方法中,主要包括相转变温度法、自乳化法和相转变法等。通过对鱼油微纳米化制剂的制备方法进行总结,为鱼油产品的产业化提供技术指导,并为以鱼油为代表的脂溶性活性药物成分未来微纳米化制剂的开发提供更为完善的理论基础。
外文摘要:ω-3 polyunsaturated fatty acids in fish oil mainly include docosahexaenoic acid(DHA)and eicosapentaenoic acid(EPA),which are indispensable fatty acids in human body.This manuscript mainly introduces the physiological functions of DHA and EPA,and the preparation methods of fish oil microencapsulation and nano emulsification,including fish oil microencapsulation and nano emulsification.The former is mainly prepared by spray drying,sharp hole coagulation bath,molecular encapsulation and water phase separation.The latter is mainly divided into two preparation mechanisms:high-energy emulsification method and low-energy emulsification method.The high-energy emulsification method mainly includes shear stirring emulsification method,ultrasonic emulsification method and high-pressure homogeneous emulsification method.The low-energy emulsification method mainly includes phase transition temperature method,self-emulsification method and phase transformation method.This paper summarizes the preparation methods of fish oil micro nano preparation,provides technical guidance for the industrialization of fish oil products,and provides a more perfect theoretical basis for the development of soluble fat active pharmaceutical components represented by fish oil in the future.
