中文摘要：从食品供应链的视角出发,提出食品质量安全风险的概念及内涵。采用内容分析法,根据国内外文献分析、实际调研及专家访谈的结果,探究供应链视角下的食品质量安全风险因素及其产生根源。在此基础上,利用ISM技术,建立风险因素结构模型,给出供应链视角下的食品质量安全风险因素之间的相互影响关系,进而揭示供应链视角下食品质量安全风险的生成机理。该研究成果将有助于进一步拓展供应链环境下食品质量安全风险演变规律的理论研究与实践应用。

外文摘要：The paper puts forward the concept and connotation of food quality safety risk from the perspective of food supply chain. Content analysis method is adopted. According to literature review at home and abroad,practical investigation and statistical analysis,the paper explores the risk factors of food quality safety from the perspective of supply chain,as well as the cause of its formation. And on this basis,the paper uses ISM technology to establish risk factor structure model,analyzes the interaction relationship among the risk factors of food quality safety under the perspective of supply chain,and moreover reveals the formation mechanism of food quality safety risk in the angle of food supply. The research findings will contribute to further continue theoretical research and practical application of the evolvement rules of food quality and safety risk under supply chain environment.
